Made a fabulous cold salad with those fresh green beans and lovely white mushrooms the other night. Steamed the beans, and mushrooms (separately), then tossed into cold water once cooked just a tiny bit. Added lots of crushed garlic, salt, pepper, and fresh chives to fat free Italian salad dressing. Mixed a can of water chesnuts with the beans and mushrooms, laid the vegetables out on a platter, and poured some dressing over top. Let it sit while we made the rest of dinner.. and it was fab-you-lous.
Will have to remember this one and make it again. Soon.
I need more recipes along the lines of this one. Cold salads, something different from our usual tossed salad. We also make broccoli salad (with cheese, chick peas, sunflower seeds, red onion, and mayo dressing); tomato and cheese salad (best if the tomoatoes are peeled, and lots of fresh basil and pepper in there, too. This one also has an Italian salad dressing base).
Now, go forth and eat vegetables. :)
